Curry Chicken Penne

Ingredients:

  • 1 pack of Roma Pasta Penne
  • 500g of chicken breast, cut into little pieces
  • 2 carrots, thinly diced
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 4 cloves of garlic, crushed
  • 1 tablespoon of chopped parsley
  • 1 tablespoon of mustard
  • 1 teaspoon of english sauce
  • Salt, pepper, and curry to taste

 

Preparation:

  1. Cook the pasta as instructed on the package. Drain and set aside.
  2. Use a bowl to mix the chicken with mustard, english sauce, salt, pepper, and curry.
  3. In a pan, stir-fry the onion and garlic until browned. Then, add in the curry chicken and cook for 5 minutes, stirring regularly.
  4. Add the carrots and parsley (you could add any vegetables you prefer, like broccoli), and cook for another 5 minutes or until the vegetables are tender.
  5. Mix the pasta with the curry chicken and serve.
