Penne Salad with Olives

Ingredients:

  • 1 pack of Roma Penne Pasta
  • 10 cherry tomatoes, cut in half
  • 1 red onion, diced
  • 1 cup of diced kale
  • ½ cup of black olives
  • ¼ teaspoon of mustard
  • 2 tablespoons of balsamic vinegar
  • 2 cloves of garlic, finely chopped
  • 2 tablespoons of Roma Basil Olive Oil
  • Salt to taste

Preparation:

  1. Cook the pasta following the instructions on the package. Drain and let it cool down.
  2. Prepare a vinaigrette with the mustard, salt, garlic, olive oil, and balsamic vinegar.
  3. Use a bowl to mix the pasta, onion, cherry tomatoes, kale, olives, and the vinaigrette.
  4. Keep it in the refrigerator until it’s time to serve.
