Chicken and Pasta Soup

Ingredients
  • 1 pack of Roma Angel Hair Pasta
  • 2 carrots peeled and chopped
  • 2 celery stems chopped
  • 1/3 cup of chopped parsley
  • 1 cup of chicken broth
  • 2 tablespoons of lemon juice
  • 1 tablespoon of olive oil
Preparation
  1. Cook the pasta according to the package instructions. Don't cook for too long! It will finish cooking in the soup.

  2. Pour olive oil into a large pot over medium heat. Add the chopped carrots and celery, and stir for 5 minutes or until veggies get soft.

  3. Add the chicken broth to the pot and turn up the heat, bringing to a boil.

  4. Add the pasta, reduce heat to medium, and simmer for 5 minutes or until the pasta is al dente.

  5. Add the parsley and lemon. Mix and cook for 2 more minutes and serve.
