Elbows with Tuna, Avocado, and Strawberries

Ingredients
  • 1 pack of Roma Elbows
  • 2 Avocados diced
  • 2 cans Tuna in water drained
  • 2 stalks of celery chopped
  • 1 cup cilantro Leaves
  • 1 cup of unsalted peanuts
  • 1 cup of sliced strawberries
  • For Vinaigrette
  • 2 lemons juice
  • 1 tablespoon of oregano
  • 1/4 cup cup of olive oil
  • Salt and pepper to taste
Preparation
  1. Cook the pasta as instructed on the package.

  2. Mix the pasta, tuna, celery, strawberries, half the peanuts, and avocado in a bowl.

  3. Mix the lemon juice with the oregano, salt, and pepper in a cup to make the vinaigrette. Pour in the olive oil last and mix it all well.

  4. Now mix it all together, serve, and decorate with avocado slices and more peanuts on top.
