Frittata

Description

NOTE: This is a recipe to reuse leftovers, so work with the amount of pasta you have and look for an amount of eggs proportional to the leftovers. Here we offer you a basic guide, but you can add or remove elements as you like (Ex: you can change the type of cheese, add bacon, or add more veggies or herbs).

Ingredients
  • 1 cup of mozzarella for every 100g of leftover spaghetti
  • 2 eggs for every 100g of leftover spaghetti
  • 2 tablespoons of butter
  • 2 cloves of garlic crushed
  • Chopped scallion to taste
  • Salt and pepper to taste
Preparation
  1. Melt the butter in a pan and sauté the garlic and scallion for 1 minute. Then add the pasta and toast it for a couple of minutes.

  2. Whisk the eggs in a bowl and add seasoning. Pour eggs into the pasta, add the mozzarella, and mix well.

  3. Cover the pan and let the mixture set like a tortilla. Then turn over the tortilla so it browns on both sides.

  4. Cut like a pie and serve.
