Pasta with Walnut Sauce

Ingredients
  • 1 package of short-cut Roma pasta
  • 300 grams chicken breast, chopped into small pieces
  • 1 garlic clove crushed
  • 1 tablespoon of butter
  • 1/2 onion chopped
  • 2 or 3 walnuts ground in a mortar
  • 1 cup of parmesan
  • 1 teaspoon of basil
  • 1 cup of chicken broth
  • 1 sprig of thyme
  • Salt and pepper to taste
  • Olive oil
Preparation
  1. Pour the butter into a pan and fry the garlic for 1 minute. Add the chicken and season with salt. Cook until golden and set aside.

  2. Pour some olive oil into the pan to stir-fry the onion. When golden, add the chicken broth, ground walnuts, basil, thyme, salt and pepper. Stir well and cook for a few minutes until the broth has reduced. Add some olive oil for a smoother, thicker texture.

  3. Cook the pasta as instructed on the package.

  4. Add the chicken and parmesan to the sauce; mix well. Then toss the pasta with the sauce and serve.
