Penne Alla Vodka with Chicken

Ingredients
  • 1 pack of Roma Pasta Penne
  • 3 tablespoons of olive oil
  • ½ cup of thinly cut onion
  • 400 g of chicken breasts, cut into pieces
  • 10 white mushrooms, chopped
  • ¼ cup of vodka
  • ¼ cup of heavy cream
  • ¾ cup of low-fat milk
  • ½ cup of grated parmesan
  • 1 ounce of tomato paste
  • Parsley to taste
  • Salt and pepper to taste
Preparation
  1. Cook the pasta following the instructions on the package.
  2. Saute the onion in a big pan with olive oil for 5 minutes at medium heat.
  3. Turn up the heat to add the chicken and the mushrooms. Let it brown for another 5 minutes.
  4. Add the vodka and wait until the alcohol evaporates. Then add in the heavy cream and tomato paste.
  5. Lower the heat and season with salt and pepper. Serve hot.
