Pesto Bacon Pasta

Ingredients
  • 1 pack of Roma Spaghetti
  • 200 grams of cherry tomatoes, halved
  • 4 bacon slices
  • 150 grams of pesto sauce (recipe on our website)
  • Salt and pepper
Preparation
  1. Cook the pasta as instructed on the package. Drain, reserving 1/4 cup of the cooking water.

  2. Meanwhile, preheat oven to 200°C. Line a baking tray with non-stick baking paper. Place the tomato, cut side up, on the prepared tray. Season with salt and pepper. Bake for 10 minutes or until softened slightly.

  3. Heat a large non-stick frying pan over medium-high heat. Cook bacon, stirring occasionally, for 5 minutes or until crisp and golden. Add tomato, pesto, and the reserved cooking water. Toss until well combined.

  4. Mix sauce with pasta and serve.
