Penne Rigate with Chili

6 serves | 460 Cal (Per serving).

Ingredients:

  • 450 g of Roma Pasta Penne
  • 2 teaspoons of salt
  • 1 cup grated parmesan
  • 1 and 1/2 cup of tomatoes, diced
  • 3 tablespoons of hot chili paste.
  • 1/3 cup of scallion, thinly chopped
  • 1 teaspoon of 1 lemon zest
  • 1 teaspoon of lemon juice
  • 1/3 cup of olive oil

Preparation:

  1. In a deep pan, pour 3 cm of water (around 4 cups) and boil it.
  2. Add the pasta and salt. Cook, stirring regularly for 9 minutes; there should be little water left in the pan.
  3. Sprinkle the parmesan over the pasta and mix. Add the tomatoes, chili paste, lemon zest, lemon juice, olive oil, and stir some more until it’s all well combined.
