Chicken and Pasta Soup

Ingredients:
  • 1 pack of Roma Angel Hair Pasta
  • 2 carrots peeled and chopped
  • 2 celery stems, chopped
  • 1/3 cup of chopped parsley
  • 1 cup of chicken broth
  • 2 tablespoons of lemon juice
  • 1 tablespoon of olive oil
Preparation:
  • Cook the pasta according to the package instructions. Don’t cook for too long! It will finish cooking in the soup.
  • Pour olive oil into a large pot over medium heat. Add the chopped carrots and celery, and stir for 5 minutes or until veggies get soft.
  • Add the chicken broth to the pot and turn up the heat, bringing to a boil.
  • Add the pasta, reduce heat to medium, and simmer for 5 minutes or until the pasta is al dente.
  • Add the parsley and lemon. Mix and cook for 2 more minutes and serve.
