Ziti with Chicken and Spinach Pesto

Ingredients:
  • 250g of Roma Pasta Ziti
  • A handful of fresh spinach
  • ½ cup of basil
  • 3 tablespoons of toasted peanuts
  • 6 tablespoons of olive oil
  • ½ teaspoon of salt (Pesto)
  • 2 chicken breasts.
  • Salt and pepper to taste (Chicken)
  • 1 cup of parmesan

 

Preparation:
  1. Cook the pasta as instructed on the package.
  2. Cut the chicken into pieces and add salt and pepper to it. Then, pour some olive oil into a pan and stir-fry the chicken until browned.
  3. Put together the spinach, basil, salt, peanuts, parmesan, and olive oil in a blender and run it until you get a smooth mix.
  4. Mix the pasta, chicken, and spinach pesto, and serve.
