Jalapeno Mac & Cheese

Ingredients: 
  • 1 pack of Roma Elbows
  • 1⁄2 cup of red kidney beans cooked to taste
  • 1 red onion chopped
  • 2 jalapeno peppers, sliced
  • 2 cups of chopped scallion
  • 2 tablespoons of butter
  • 3 cups of cheddar
  • 1 cup of heavy cream
  • 2 tablespoons of flour
  • 1 cup of milk
  • Salt and pepper to taste
  • Parmesan for topping
Preparation:   
  1. Cook the pasta following the instructions on the package.
  2. Stir-fry jalapenos and onions in the butter until softened, about 5 minutes.
  3. Whisk in the flour and continue to cook for 4-5 minutes, stirring often.
  4. Pour in the heavy cream and milk and whisk together. Add cheese, 1 cup at a time, until melted, stirring well after each addition. Let cook for 10-15 minutes, stirring often.
  5. Mix cheese sauce with pasta. Add beans on top (or mix them in) and sprinkle parmesan over it.
